Smoothie Popsicles 🍡Obviously not as good as “regular” ice cream, but a yummier way to eat some greens 🥬 

1 orange 🍊 
2 dl frozen spinach 🌱 
1 dl frozen pineapple 🍍 
1 banana 🍌 
Fresh ginger, about 3x3 cm
3 dl oat milk

Blend, pour into popsicle forms and leave in the freezer overnight. If you prefer a sweeter taste, add dates or more banana 👌🏻

Frozen Yoghurt Bites 🍊As easy as it gets!

1 clementine
0,5 dl/ 50 g yoghurt (I used coconut yoghurt)
1 tsp grated coconut (kokosflingor)

Peel the clementine and dip every piece in the yoghurt. Put them on a piece of baking paper and add the grated coconut. Store in the freezer for about 2 hours. Let them thaw a couple of minutes before eating.

Something I really miss right now is to go to Oslo and eat sandwiches from the Juicery. While I’m waiting for it to be possible, I made my own version of it 😁
For this you need:
Gluten free bread (I used my baguette recipe that you can see a few posts ago)
Pesto
Oumph Thyme & Garlic 
Avocado
Tomatoes 

To make it a little warmer and crispier I put it in the waffle iron for a couple of minutes, but the oven works too 👌🏻

Granola:

160 g oats
35 g coconut flakes
65 g flaxseeds 
50 g brazil nuts 
35 g walnuts
100 ml water
2 tbsp coconut oil 
3 tbsp liquid sweetener of choice 

Chop the nuts and mix with the rest of the ingredients. Pour on baking paper and bake in the oven at 347 F for about 30 minutes.

Summer rolls with peanut butter sauce 🥜 I love to have rice paper at home so I can make these really quick! I fill them with whatever I have at home, this time sprouts, red pepper, cucumber, carrots and red cabbage. Mix with the peanut butter sauce and eat straight away! 🌯

1 dl (105 g) peanut butter 
2 tbsp lime juice 
1 cm fresh ginger (grated)
4 tbsp water 

Mix everything in a bowl - ready to serve!

Summer rolls with peanut butter sauce 🥜 I love to have rice paper at home so I can make these really quick! I fill them with whatever I have at home, this time sprouts, red pepper, cucumber, carrots and red cabbage. Mix with the peanut butter sauce and eat straight away! 🌯 1 dl (105 g) peanut butter 2 tbsp lime juice 1 cm fresh ginger (grated) 4 tbsp water Mix everything in a bowl - ready to serve!

Quinoa salad 🥗 This is a salad that I made all the time back in the days when I was a student, but with couscous instead of quinoa. It’s perfect to make a big batch and eat for lunch! 
All you need is quinoa, red lentils, red onion, garlic, green olives, vegan feta cheese and spinach 🍃

Merry Christmas! 🎄💫 What about a really moist, chocolate-y Christmas cake? Tbh, I’ve never had a Christmas cake before but I’m liking the idea now!

200 g zucchini
1 dl (75 g) coconut flour
1 dl (75 g) rice flour
1,5 dl (50 g) cocoa powder
2 dl (200 ml) apple sauce
1,5 dl (110 g) coconut sugar
1 tsp bicarbonate
1 tsp baking powder
1 pinch of vanilla powder
1 dl (100 ml) oat milk

.
1. Grate the zucchini with a grater and squeeze out the water.
2. Mix the zucchini with the rest of the ingredients and blend it to a smooth batter.
3. Pour the batter in an oiled baking form (I used coconut oil) and put it in the oven.
4. Bake at ‪180 C/ 381 F‬ for 30-40 minutes (maybe more depending on oven). Use a stick to check if the cake is dry, it should not be too wet inside. Let cool down before eating. Top with oat cream.

Nut-free Fudge based on sunflower seeds 🌻 English recipe below 👇🏻

2 dl solrosfrön
3 msk kakao
10 torkade dadlar
2 msk kokosolja
1 nypa salt
1 tsk agavesirap

1. Börja med att blötlägga dadlarna i vatten i ca 10 minuter.
2. Mixa först alla solrosfrön, tillsätt sedan resten.
3. Tryck ut på bakplåtspapper och toppa med lite havssalt.
4. Låt stå i frysen tills det har stelnat och skär i bitar.

120 g sunflower seeds

2 tbsp coconut oil
1 pinch of salt
1 tsp liquid sweetener of choice

Smält chokladen (ca 100 g) och använd en tesked för att fördela ut i formar. Använd toppen av skeden för att ”smeta ut” choklad upp till kanterna på formen. Låt stelna i frysen ett par minuter innan du fyller på med jordnötssmör. Därefter behöver de stelna ett tag till innan du kan toppa med resten av chokladen. 

Melt the chocolate (about 100 g) and use a teaspoon to pour it in baking forms. Use the top of the spoon to get chocolate even on the sides of the forms. Let set in the freezer for a couple of minutes before adding the peanut butter. After that they need to set for another couple of minutes before you can add the rest of the chocolate.

Granola-bars
250 g granola (förslagsvis pepparkaksgranolan från mitt tidigare inlägg)
7 dadlar
3 msk havredryck 
3 msk jordnötssmör
Valfritt: choklad att ringla över

Mixa dadlar, havredryck och jordnötssmör till en slät smet. Blanda med granolan och tryck ut på bakplåtspapper. Ställ in i ugnen i 12-15 min på 150 C. Låt svalna och skär sedan i bitar. Förvara i kylskåp.

250 g granola (preferably the Gingerbread granola in my previous post) 
7 dates
3 tbsp oat milk
3 tbsp peanutbutter
Optional: chocolate to sprinkle on top

Blend the dates, oat milk and peanutbutter until it is smooth. Mix it with the granola and and flatten the dough on baking paper. Bake in the oven for 12-15 minutes at 300 F.

Snickers-fudge 💫 Some of you might remember this, but it’s yummy enough to show again 😁

Bottenlager
6 msk kokosolja
5 msk kakao
5 msk agavesirap
4 msk jordnötssmör

Övre lager:
5 msk jordnötssmör
1 msk agavesirap
2 msk kokosolja
1 krm ingefära
1 krm kanel
1 krm kardemumma

Börja med att smälta ingredienserna till det undre lagret på låg värme. Häll sedan i en form klädd i bakplåtspapper och ställ in i frysen tills det stelnat. Smält ingredienserna till det övre lagret på samma sätt och häll ut i formen. 

Bottom layer 
6 tbsp coconut oil 
5 tbsp cocoa powder
5 tbsp liquid sweetener of choice 
4 tbsp peanut butter 

Top layer:
5 tbsp peanut butter 
1 tbsp liquid sweetener of choice 
2 tbsp coconut oil 
1 ml grounded ginger
1 ml grounded cinnamon 
1 ml cardamom

Start with melting the ingredients for the bottom layer in a pot on low heat. Pour in a baking form covered in baking paper and put in the freezer until it has set. Do the same procedure with the top layer.
