Here is my entry dear team Recipe Name -custard fruity-chumchum pudding with #Ruchicustardpowder #Frozit #Ruchi #ContestAlert FROZIT #RepublicDay #RecipeContest #winprizes #prideofodisha - #frozit FROZIT- #Ruchi -custard fruity-chumchum pudding ingredients- Cornflakes - 2 cups(crumbs)+1tsp for garnish butter-1/4cup sugar - 4 tbsps or to taste milk-1cup Ruchi custard powder-2tbsps apple -1(1/2 grated and for garnish) chilled chum-chum-8 pieces 2tsp tutu fruity Method -For preparing cornflakes pudding, take a bowl add cornflakes, butter and 1 1/2 tbsp sugar. Mix well. Put this mixture in a bowl and press it down. Take a cup, add #Ruchi custard powder,sugar and milk. Mix well to avoid lumps. Pour this custard mixture into the grated peeled apple and allow it to cook for 2 minutes on low flame. keep over ice to cool for 2 minutes.. Pour it over the cornflakes and allow it to cool in freezer for 3 minutes.. Arrange chilled chum-chum over cornflakes custard mixture. Rest for 15 minutes or until the rava absorbs water. Mix well and add water as required, to form an idli batter consistency. Now divide the mixture in 2 parts. Keep one part as it is and to the other part add 1 tbsp beetroot paste and mix well. just before steaming add a 1/2 tsp eno (fruit salt) and mix well till it turns frothy. alternatively, add a pinch of baking soda.in both batters. do not rest the batter. Now add spoonful of mixtures in an alternate manner in the idli mould to get the zebra pattern and create marvel effect with wooden toothpick. Recipe name Idli pizziana Ingredients- 4-6 all ready prepared rawa idlies ,2 tbsp tomato ketchup ,1 tbsp chilli sauce idlies 1 small onion chopped, 1 capsicum ,2tsp boiled corn 1 small sized jalepeno chopped ,mozerella cheese – as per taste 1/4 tsp red chilli flakes Method-Mix together ketchup and chilli sauce.Mix onion, capsicum,jalepeneos and boiled corn. Take one idli and spread little sauce on it and grate little cheese on it. Arrange little vegetable mixture on it and again grate some cheese on it. Sprinkle little red pepper on it. Repeat with all the idlas. in the mean while pre- heat the oven at 180 degree And grease a baking tray and arrange the idlis on it. Mix all of these together. This is the main batter and we will leave it to rest for about 20 minutes. Prepare the tempering in a pan. Heat oil and add rai to it. Add chopped curry leaves and add this tempering to the suji paste. Mix well. Once the batter is ready, take some batter in 3 separate bowls. Recipe name -Khandvi Ravioli - fusion of Gujrati indian and Italian cuisine. For ravioli covering-¼ cup Curd,2tbsps Gram Flour,½ tsp Turmeric Powder,½ tsp Red Chili Powder,2cups Water for stuffing-1-2 tbsp oil,½ tsp Mustard Seeds,1 tsp Chopped Green Chili,1cup chopped tomatoes,2 tbsp Chopped Green Coriander,red chilli flakes and oregano to taste,Salt to taste, other ingredients-Oil for greasing 2tbsps stuffing ,redchilliflakes,oregano to garnish salad leaves and mixed sauces to serve with Method-For ravioli covering-In a bowl take curd, gram flour, asafetida, turmeric powder, salt and water. Mix it well and make smooth batter.Cook batter in hot pan till thick.On a plate greased with oil pour the batter and spread it. Keep aside for cool. For stuffing –In the mean time ,in a pan heat oil and put mustard seeds, green chilies, chopped tomatoes and salt. Roast it well. Add red chilli flakes and oregano to taste. Mix green coriander. A breakfast filling snack. I used moongdal batter for base to make pan cake ,and stuffed with filling of vegetables,cheese or paneer and pizza sauce and seasoning. Ingredients:. Dhuli moong dal(mung bean-split green lentil) - 1 cup Finely chopped vegetables of your choice - 1 cup. seasoning and sauce to taste -Salt and red chiliflakes,oregano as per taste,pizza sauce to taste 1 Tsp ENO fruit salt, cheese or paneer (as required or per taste ) Method-- Soak moong dal for 2-3 hrs and grind it in mixer-blender. Make a fine paste; it should be thick batter like for dosa-pancake. Now take it out in a big bowl and add salt, garam masala and red chili powder according to taste. In a separate bowl just mix all the finely chopped vegetables, seasoning and pizza sauce to taste and paneer or cheese.now add a pinch of salt, and mix. I have used grated paneer and mixed it with vegetables. Heat a non stick tawa or fry pan on gas, put little oil and spread it evenly. Take about ¾ cup of moong dal batter in a separate bowl, add 1/2 Tsp ENO fruit salt. Add 2 tbsp water over the ENO and mix well. The batter will be become fluffy. Immediately pour this batter on hot greased pan. After 1-2 minutes, put few drops of oil on the surface. Now slowly turn the side. Put the cut marks on top or cooked side of moonglett with the knife. Don't cut deep or bottom. Flip the top layer towards outside. Add salt,( seasoning qand pizza sauce ) chilly powder and paneer or cheese to the chopped vegetables according to taste. Now add the chopped vegetables mixture over the moonglett.top with cheese or paneer . Cover with the top layer towards inside. Add some oil or butter and slowly turn the side with the help of spatula. Let it cook from both sides. Moongdal Indian pizza is ready . Serve hot. I have read that its origin is from Ancient Greece .As a base biscuit crust is used in it. But I tried to give it a Indian twist .I imagined Ghevar of our india(basically from Rajasthan ) as a base in place of biscuit base while making cheese cake .I tried to give it a rosy flavored cheese –chocolate -creamy topping over ghever base with Indian paneer.So it is Indian rosy cheese cake. Basically I changed Ancient Greece cuisine cheese cake to Indian cheese cake . Recipe name-Rosy –Chhesy Ghevar Ingredients-1 cup fresh cream 1/2 cup milk, 2tsp powdered sugar, 1/2cup grated –home made mashed paneer 2tbsps white chocolate 2tsp rose sugar syrup 1/2 tsp agar-agar powder Sugar rose, Grated white chocolate and rose petals-to garnish Method – Just mix the agar-agar powder in 2 tbsp hot water. In a thick pot add ½ of milk and cream together and heat till it simmers. Add sugar and grated white chocolate and cook till it melts. Remove from heat. Add agar-agar mixture and mix well immediately. Add mashed paneer to the mixture with rose sugar syrup and mix or blend properly till smooth. Keep aside to cool. Spread this mixture over ghever .Cover it with cling wrap and keep it refrigerated for a minimum of 5-6 hrs or you can even keep it overnight or till they set. Garnish Grated white chocolate, Sugar rose and rose petals. Serve chilled. This is my tricolor Bhapa Doi recipe ,steamed in shells shaped idli moulds to give it unique shape.Sharing - Tricolor Bhapa Doi shells Recipe name –Tricolor Bhapa Doi shells Ingredients-½ cup milk, full cream ¼ cup milk powder, full cream 1/2 cup yoghurt , thick 1/2 cup condensed milk / milkmaid ½ tsp cardamom powder 2tbsps thick spinach puree(cooked ) 2tbsps thick orange and carrot cooked puree or sauce Butter for greasing shell shaped idli moulds To serve with –orange white and green all ready prepared tuiles I used idli stand with shell shaped dents or moulds Method -firstly, in a large bowl take milk and milk powder. whisk well till the milk powder combines well without any lumps Now add yoghurt and condensed milk.Combine cardamom powder with mixture. Whisk smooth making sure everything is combined well.Devide the milk mixture into 3 equal parts .Mix orange and carrot puree or sauce to one portion of the batter and mix well, to make the orange colored doi moulds. Mix thick spinach puree to second portion of the batter to make the green colored doi moulds and mix well .Use the basic batter for white color to make the white colored doi moulds. Use melted butter and grease shell shaped idli moulds .fill each of them with 3/4 th full of batter, putting all the colors separately in the shell shaped idli moulds. Steam cook on medium flame for about 15-18 minutes. Check,if the toothpick inserted comes out clean. Refrigerate the set yogurt mixture for an hour or till it sets completely. Use a spoon or butter knife to remove the prepared doi from moulds, after they are cool and set. Serve cold Tricolor Bhapa Doi shells, with orange white and green colored tuiles. For green color sandesh, heat a nonstick pan, add mashed paneer, Powdered sugar to taste ,green spinach thick paste,1/8 cup milk powder & ¼ tsp cardamom powder .Cook it & when it will start to leave sides of the pan ,switch off the flame. Similarly, make it cool & switch off the flame. For orange colour sandesh, heat a nonstick pan, add mashed paneer, Powdered sugar to taste ,carrot -orange juice thick paste paste and 1/8 cup of milk powder. Cook it & when it will start to leave sides of the pan, switch off the flame. Similarly,make it cool. & switch off the flame. Now leave all the prepared doughs for half an hour. You can pack it for your kids lunch box too. Ingredients -1 cup lotus seeds 1/4 cup rice flour 1/8 cup gramflour Salt to taste 1/2 tsp Mustard Seeds 4-6 Curry Leaves 2 tbsps Oil 3/4 tsp Fruit Salt or ENO Water roasted lotus seeds for topping as required Method -Dry roast lotus seeds till slightly browned, cool and powder it.Mix powdered lotus seeds, gramflour and rice flour with curd, salt and enough water to make a medium consistency batter. For tempering, heat oil in a pan. When oil becomes hot, add mustard seeds. Let the mustard splutter. Add curry leaves. Pour half of the tempering over the batter and mix well. If the batter has absorbed water, then adjust the consistency of the batter.Heat the idli steamer. Grease idli moulds with oil. Add fruit salt in the batter and mix lightly with spoon. Pour the batter in moulds till 3/4 only as idlies will rise after steaming. Steam for 7-8mins till toothpick inserted comes out clean. allow idlies to rest for 5 mins then unmould.fry idlies with left tempering and seasoning to taste. Garnish with roasted lotus seeds. Mix spices and salt coriander leaves and let it cool. for samosa dough – Take all the dough ingredients and divide into two parts. Add beetroot puree in one part for colour.Make smooth –hard dough from both the ingredients. rest for 15 minutes to both the ingredients. Take a big portion of dough roll thin chapati cut in to a square shape.Do same with colored one. Add four cups of water and mix well. Heat ghee in a kadai. Add cumin seeds, mustard seeds dry red chillies and curry leaves. Sauté till the cumin seeds splutter, add the yogurt mixture and cook till it thickens slightly. Add sugar, salt and mix. Simmer for five minutes. Add fried lotus seeds and cook for 2 minutes more. #SuperFunWithSuperfood #SuperFunWithSuperfood Delci -Recipe Name -Meeng –Makhana Tukri ( burfi ) Ingredients -Lotus seeds(phool makhanas )–2cups ,Melon seeds -1/4 cup, Cashewnut – 1/4 cup , raw Sugar –1 cup or to taste Water – ¾ cup (for making syrup),½ tsp –cardamom powder Ghee – 2 tbsp + 1 tsp (for greasing the plate) To garnish-Roasted lotus seeds halves and pumpkin seeds Method -Heat a pan and add some ghee in it. Add phool makhanas in it and roast them for 4-5 mins or until you smell their aroma. Add Cashew nut and roast again for 1 minute. Now ,roast melon seeds also, separately . Keep aside to cool. Grind phool makhanas and Cashewnut in a mixer or food processor to a coarse powder. For sugar syrup -Take a pan and add water and sugar in it. Bring them to a boil. Add cardamom powder.When the sugar syrup comes to a boil, check the thread consistency of it by dropping a drop in a cooled plate. If its not ready yet, simmer the heat and continue boiling. Meanwhile keep your thali or plate ready by greasing it well with ghee. To check sugar syrup - Place it between your fore-finger and thumb on cooling, if you see 2-3 threads stretching out of it, it is done. Turn off the heat of the sugar syrup and add the makhana-cashewnut powder and roasted melon seeds into it. Mix it well. Quickly transfer the contents into the greased plate(thali). Spread it in the thali and pat it with a greased spoon to form an even layer. While the mixture is still hot, cut lines in desired shape with a knife in the thali.(This barfi sets super fast.)Top each tukri with roasted lotus seeds halves and pumpkin seeds and lightly press . After about half an hour, when the barfi has cooled down take out pieces from the thali and serve. Store it in air-tight container at room temperature. Add makhane/lotus seeds to the pan. Cook them over medium heat until they become light brown in color and brittle, stirring occasionally. This may take 7-8 minutes. To check if the seeds are thoroughly cooked, press them in between fingers and it should feel hard and brittle. Take it off the flame. Transfer roasted makhana to a plate and set aside .Meanwhile, combine jaggery with remaining ghee, 3 tablespoons of water and boil until thick. Check the Consistency. Now add desiccated coconut,(if using ) roasted melon seeds and cardamom powder to it.Add roasted makhana to it. Toss well and switch off. Let it cool down and separate the sticky lotus seeds with fingers,.then serve or fill in an airtight jar.. TIPS– Make sure foxnuts/ makhane are crispy and brittle before you move on to the next step. If makhane is not brittle they will turn soggy as soon as we add jaggery to it. To check if the seeds are thoroughly cooked, press them in between fingers and it should feel hard and brittle. Consistency check tip :-Keep a separate bowl ready filled with little water.Take a drop of jaggery syrup and put it in water, it should stand firm and should not dissolve ,Now try to gather and roll, it should form a hard ball, If you want crisp makhana.
