Dahi Wali Lauki ‼️

Have you ever had dahi lauki?

It is such a unique vegetable recipe that you will never forget after eating it and you will fall in love with it, you will ask for it again and again.

Step by step method:

1.heat oil in a kadai, then add cumin seeds, mustard seeds. When they begin to splutter add hing and green chillies (optional)
2.Stir fry for a minute and then add all the dry masalas – turmeric,  red chilly Powder and  coriander powder. Stir constantly so that the masala does not burn. If it starts to then add 1 tblsp of water and cook further.
3.Once the oil begins to release add the lauki and cover with the lid and cook for 5 – 10 minutes or till the lauki is done. If you are adding boiled lauki then cook just for 2 – 3 mins so that the lauki absorbs all the masala flavour.
4.Once lauki is done,swtich off the flame and let the sabji to cool down.Add the whisked dahi / curd.Cook no further or the curd will curddle.
5.Tadaka preparation-
Heat the pan, add two teaspoons of oil and make red tempering by adding red mirch cumin seeds, crushed garlic,curry leaves and dry red chilli.Put the tempering in the sabji.
Now enjoy it chapati rice  or paratha.

Ghar pe banao aur mujhe jaroor batao.😍

Shakshuka! Ever had it❓❓

Shakshuka has more than a few things going for it. It’s fun to say, fun to make and fun to eat. The word shakshuka comes from Arabic, meaning, “a haphazard mixture” or “all mixed up.”

This easy shakshuka is made with eggs that are gently poached in a simmering mixture of tomatoes, bell peppers, onions, and garlic. A few warm spices and some fresh herbs complete this satisfying one-skillet dish! I personally like some cheese on the top of it.

Serve it for breakfast, lunch, or dinner.

11k special Odia style Rice Kheer

Today’s reel is rice kheer from Odia cuisine Chaula Khiri / payes  in pressure cooker. 

I usually make  kheer in pressure cooker to shave time and gas.This way, the preparation time is bit less as compared to the traditional one. 

Step by step method:
🔹Wash 1/2 cup Gobindobhog rice or any short grain rice or basmati rice washed and soak In water for 15-20mins.
🔹 Meanwhile boil 1litre full cream milk and reduce it to half litre.
🔹Heat a big pressure cooker, add 1tbs of ghee. Then add 2to3tbs sugar. Allow it to melt and caramalise.
🔹Then add soaked rice and  soute it for 2mins.
🔹Then add 1glass water mix well and close the lid. Cook rice is well done.
🔹Turn off heat and allow the pressure to release automatically.
🔹And mash the rice properly and add into the boiled milk and mix well to avoid lumps.
🔹Again switch on the flame and add  3tbs sugar and mix well till the sugar has completely dissolved.
🔹Then add roasted dryfruits and cardmom powder,cook it for another 5 minutes.
🔹 Switch off the flame and put pinch of salt and mix well. 
🔹Serve warm or chilled 

🌸NOTE:- Caramelization part impacts a beautiful to the chaula khiri/ kheer and smells like rabrdi. So i always recommended not to skip.

When the train is moving on the track and the train moves a little ahead, then I only remember this vegetable, along with hot hot poori, chillies are also there. 
Kya apko bhi yaad aati hai woh train ki safar??

Ingredients:
3tbs oil
1tbs Cumin seeds
Chopped green chillies
1tbs red chilli powder
1tsp termeric powder
2tbs coriander powder
Salt to taste
2-3 tomatoes finely chopped
Boiled potatoes roughly cut
Chopped coriander leaves

Process:
🔹Heat oil in a kadhai add cumin seeds and let them splutter . Add green chillies and cook for a minute.
🔹Add red chilli powder, termeric powder and coriander powder and mix well
🔹Add tomatoes,mix well. Cook until soften or leaves oil. Add salt and mix well.
🔹Add boiled potatoes and cook for 3-4 minutes. Keep stirring to avoid the potatoes from sticking.
🔹Add water as required to make gravy. Cook for another 5 minutes. Garnish with chopped coriander leaves and serve hot with garmagaram puri or paratha.

What Chole Batura is to Amritsar, Dalma is to Odisha. No meal, whether it’s a daily affair or a feast, is complete without this lentil dish. Such is the popularity of this less-oil, lentil and vegetables medley that it has, over a period, become the first introduction to the Oriya cuisine. It is a popular belief that once you have tasted the dalma and loved it, you will love the rest of the food.
Every Odia family has it's own version of this classic dish.

Guys try it once....
Recipe:
1.Fist heat a heavy pan or pressure cooker and dry roast the split yellow moong dal. When it become to brown add water. Then add termeric powder and one bay leaf to it. 
2.Cut and wash all vegetables. I have used brinjal, raw papaya, raw banana, french beans and tomato. You can use of your choice.
3. Add grated ginger and salt. Then cover the lid and cook for 15to 20mins or pressure cook for 1whistle.
4.Heat mustard oil in a kadhai or tadka pan Add dry red chilli,panch phoron and onion (optional).Let them crackle.
5. Pour the tadka to the dal and mix well.
6. Add roasted red chilli and Cumin Powder and desi ghee and mix everything well.
7. Serve with plain rice. And with chapati too.
