Let's talk Rest Days / Recovery 😌 Recovery means just that - it is allowing your body to adapt to the pressure's that have been placed on it through resistance exercises. Muscles need to repair and rebuild ✊ During recovery it is important to refuel, rest and rehydrate well, in order to achieve optimal gains in fitness 💪 If you have ants in your pants and cannot just "rest" then you can have active recovery, by doing activities such as: 💚 Walking 💚 Yoga / Pilates 💚 Stretching Do not underestimate the importance of having rest days. Unless you are an athlete in pre-competition training, then you must have at least 2 rest days per week. Also, listen to your body... If you wake and feel really sore, then take that as a cue to allow your body to recover. Custard filled Caramel Cupcakes 🤤 just incase you need to see a gooey cupcake centre, topped with delicious buttercream🧁 Serious yum factor with these luscious cupcakes. Who doesn't love a gooey centre 😍 Ingredients: 1 & 1/2 cups Soya Milk, 1 tbsp Cider Vinegar, 1 & 1/2 tsp Caramel Flavouring, 1/2 cup Olive Oil, 2 Cups Plain Flour, 2 tsp Baking Powder, 1/2 tsp Bicarb Soda, 1/4 tsp salt, 1/2 cup caster sugar, 1/4 cup granulated stevia 🧁 Oven on at 160°C Fan (180°C). Mix the milk and vinegar together and set aside for few minutes (makes buttermilk). 🧁 Sift the flour, BP, BS and salt into a large bowl then add in the sugar and stevia and stir till all combined. 🧁 Add the caramel and oil to the buttermilk mixture then add it to the bowl of dry ingredients. Mix together well. 🧁 Use an ice-cream scooper and place 1 & 1/2 scoops of batter in each muffin case. Makes approx 16-18 cupcakes. Place in over in the middle and bake for 17-20 minutes. 🧁 Allow to cool completely. Then, using a small knife cut out a deep circle in the centre of the cupcakes, keep the tops. Fill with custard and replace the tops. Frost with buttercream (or cream cheese) frosting. Hit save and make these! Hello 👋 For those who don't know me, I wanted to introduce myself... I am a wife and a mum to a Girl, two Boys and a Boy Furbaby 💍💖💙💙🐶. I am half Filipino 🇵🇭 and half Arabic, born in Bahrain 🇧🇭 and living in the UK. I am a certified Fitness Instructor, Circuit and Exercise to Music Instructor and midway through studying for my level 3 PT qualification, which I will follow up to level 4 💪 I am also, part way through my Nutritionist qualifications 🥑 I embarked on this health and fitness journey in my early 30s and I want to show that you are never too old to start a fresh and do what you love! Who's nuts about Brownies? 🙋‍♀️ Me, me, me These brownies have added protein, with the use of a tin of Black Beans, as well as Peanut Butter 🥜 I followed the recipe by @lovingitvegan and switched/added a few ingredients ... Ingredients: 2 FlaxEggs (2tbsp ground flaxseed + 6tbsp water), 1x 400g tin Black Beans, 2tbsp Peanut Butter, 1/2 cup Vegetable Oil, 6drops of @skinnyfoodco Chocolate Peanut Butter Flavour, 1/2 cup Plain Flour, 3/4 cup Cocoa, 3/4 cup Caster Sugar, 1tsp Baking Powder, 1/4 tsp Salt, 1/2 cup chopped Vegan Chocolate. 🍫 Pre-heat oven to 160° fan (180°C). Make the flax eggs and set aside for 5 minutes. Blitz up the drained Black beans, oil, flavour drops and flaxeggs. 🍫 Sift together the cocoa, flour, baking powder and salt. Mix in the sugar. Then mix in the blackbean mixture along with the peanut butter and stir well. Finally add and stir in the chocolate. 🍫 Spread evenly in a 9" square tin, drizzle over Peanut butter and bake on middle shelf, for approx 35. Allow to cool before cutting. So fudgey and moreish... you'll keep going back for more 🤤. Throwback to June 2020 when I was in Guernsey and I was able to go out for dinner without masks or social distancing 🙌 Half way through lockdown 3.0 and its feeling better now than week 1, that's for sure. Healthier S'mores 😲! You know you'll want s'more 😝 I know a s'more doesn't have to be healthy but when the kids want to eat several of them, I have to improvise 😉 We used sesame and poppy seed crackers, a cube of chocolate & half a @mydandies marshmallow. We are head over peels about this Banana Loaf Cake 🍌🐵. 👉 for more pictures 👇 for the recipe Baked with my little helpers and using less refined sugar, nuts and raisins, this cake is a great snack or dessert for the whole family. 🍌 Oven on at 170° F. Mash 2 & 1/2 Large Bananas. In a jug, mix 40g Light brown Sugar, 70g @skinnyfoodco Banoffee Pie Syrup and 75g Vegetable Oil. 🍌 In bowl, sift together 225g Self Raising Flour, 2 tsps Baking Powder. Chop 40g mixed nuts & 40g raisins and add to bowl. Mix well. 🍌 Add in bananas, sugar-oil mixture and 4 tbsps Plant Milk. Combined using a spoon. Pour into greased & lined loaf tin and bake for 40-45 minutes in middle of oven. Homemade Vegan Pandesal😋 👉 swipe for cheese goo Takes me back to eating breakfast with my cousins in Manilla 🇵🇭😍 I veganised a recipe I found online and it's spot on. My Mum had the first tear, first bite and was literally in love 🥰 Ingredients: 2 Cups Plain Flour, 1 & 1/2 Cups Strong Bread Flour, 6 tbsps Sugar, 1 tsp Salt, 1 & 1/2 tsp fast acting Yeast, 1/2 cup Oat milk, 1/2 cup Coconut Milk, 2 tbsp Veg Oil, 1 Flax Egg and optional extra 1/4 Cup Ube Powder and 3/4 hot water 💜 If using ube, place the powder and hot water in a bowl and allow ube to rehydrate for few minutes. Make Flax Egg by mixing 1 tbsp ground flaxseed with 3 tbsp water and set aside for minimum 5 minutes. 💜 Add flours, sugar, salt and yeast to bowl and mix together. 💜 Warm the milks together and add to dry ingredients along with the veg oil and mix well. Then add in the rehydrated ube (if using) and mix again. 💜 It's a sticky dough, so use a mixer or if using hands then oil them and knead for 5-8 minutes. 💜 Allow to prove till doubled in size, likely to be 1 hour or more. 💜 Knock air out, knead for a couple of minutes then cut in 2, roll each half out into long rolls then cut each roll into 5 or 6 pieces. Roll each piece out flat and add in vegan cheese cube (I used @vitalite ), fold in the edges and shape into ball. Place on a tray and allow to prove for 30-40 minutes. 💜 Bake at 150°C Fan (170°C) for 17-20 minutes. 💜Hazelnut Sparkle Cupcakes 💙💛 Switched Vanilla Extract for Hazelnut Flavouring and voila... Glitter just because, why not 🤗 💛 mix 2 cup plain flour, 1/2 cup  caster sugar, 1/2 tsp baking soda, 2 tsp baking powder and 1/4 tsp salt. 💜 stir 1 & 1/2 cup oat milk with 1 tbsp cider vinegar. Add in 5 drops @skinnyfoodco Hazelnut flavouring, 1/4 cup maple syrup and 1/2 cup olive oil. 💙 mix wet and dry well then use 1 & 1/4 scoope per muffin case (ice-cream scooper). Bake for 15 - 18 minutes on 160°C Fan. 💛 cool before decorating. I used 1/2 tub @droetkerbakes cream cheese frosting, mixed with 1 & 1/2 tbsp softened vegan spread, 3 drops hazenut flavouring & 1 cup icing sugar. Beat well till thick. 📣Warning Death by Chocolate😲. The most luscious Chocolate Pudding! 2 small Avocado, 1/4 cup Cocoa Powder, 2 tbsp Maple Syrup, 1/2 - 3/4 cup Hazelnut Milk, 1/2 cup Dates... • Soak dates in hot water for at least 10 minutes and drain. • Add dates and avocados to food processor and once blitzed add in the maple. Blitz till combined and then add in cocoa. • Add in 1/2 cup of milk and blitz. Check consistency with a spoon. If you want it looser then add more milk. Zero cost DIY costume 😲👉👇 Together we made part of a hen costume ready for the Christmas play 🎄. Thankfully the school are providing a mask and she already has black leggings to wear on the day😉 When Megan told me she needed a costume my first thought was to buy. Then I thought "well, when will she wear that again?" Answer: Never! So we looked at some ideas online, went through all the kids old clothes and voilà... the final piece ✔ We used Lincoln's old white tops, painted feather shapes, cut them out and I sewed them onto an old yellow top of hers ✊ Try not to buy new! Often find that store bought cereal bars are far from healthy 😲. There are some that use only natural ingredients and little to no added sugar but, nothing beats baking a batch of your own! These crunchy cereal bar cookies had just a handful of ingredients and are perfect for the whole family 🥰. Oats, Mixed Nuts and Seeds pulsed in a food processor, add peanut flour and Corn Flakes and pulse again. Place in a bowl and add 2 tbsps of melted butter, 3- 4 tbsps of agave nectar and enough almond milk to bring the whole thing together. Shape anyway you like and place in the over at 160°F, for 15 minutes 😋. Getting children to eat a healthy pudding isn't easy😏 This Avocado Mint Chocolate Ice-cream is fab! They aren't a fan of avocado in it's raw form, which is madness I know😲. Sunday Dinners are all about a Roast right 👐 My kids love all nuts but are fussy with some veggies, so it's a clever way to get them to eat ones they wouldn't normally try 😉 🥜 Pulse 180g mix of cashews, almonds, hazelnuts, walnuts, brazil nuts, 80g mix of pumpkin and sunflower seeds and 1 vegetable stock cube, in food processor (leave pieces coarse). 🥜Use Fry Light to spray loaf tin and also frying pan for frying veggies: 2 sticks celery - finely chopped, 1 leek - thinly sliced, 1 large carrot - grated and 2 cloves garlic - finely chopped 🥜Add veggies to bowl and stir in 3 tbsp cashew butter, 180g cooked chestnuts roughly chopped, 65g Raisins, 4 tbsp soya milk and the coarsely blitzed nut/seed mix. 🥜Season to taste (I didn't need to as it was already so flavourful) 🥜Pack tightly into loaf tin, cover with foil. Bake at 180°Fan (200°) for 25mins, remove foil and bake for 15 - 20 mins till the top is as browned as you like 👍 We served ours with roasted veggies, petit pois and thick veggie gravy.
