It's always better to have some healthy snack on hand and to do prep for breakfast ahead. 
When I know it's coming busy days I make sure to have ready jar of homemade granola ( now I am baking new), fresh fruits, yogurt and some bliss balls for afternoon cravings.
Here is idea for easy and quick snack โคต๏ธ

 Choco coco bliss balls

* 1 cup spelt flakes or oat flour
* 2 tbsp cacao powder
* 1 1/2 tbsp chia seeds
* 1/2 cinnamon
* 4-5 dates 
* 2 tbsp tahini (or nut butter of choice) if you wanna keep recipe nut free but you don't like tahini,make with pumpkin seeds butter.

~ Blend together spelt flakes/oat flour, cacao 1 tbsp chia and cinnamon. Add after dates, tahini and rest half spoon chia (for bit crunchy taste) and blend again.
Roll into cacao or coconut. 
Enjoy!

I ordered these cute ramekins and couldnโ€™t wait to try some dessert in it.
In my country I have tried pistachio cream but it wasnโ€™t healthy ( I am honest) and would liked to recreate a healthy one.
So here we are ~> 
๐Ÿ€Pistachio creamy pudding ๐Ÿ’š
Is with no eggs, vegan friendly, gluten-free and soo creamy and tasty ๐Ÿ‘Œ
Swipe for texture โ†ช๏ธ

For 3 portion you will need:
* 300 ml oat milk
* 3 tbsps arrowroot starch ( I like it more than corn starch because is gluten free, contains more dietary fibres and calcium)
* 1/2 cup pistachios grounded into flour
* 1/4 cup maple syrup
* 3 hipped tbsps hemp butter
* 1 tbsps maca powder
* vanilla and salt

Resolve arrowroot starch in a little bit of milk, add another milk in pan, together with maca powder and hemp butter and mix, after becoming hotter add arrowroot starch mixture and simmer about 2 minutes until thickens. When is ready remove it from heat and add salt, vanilla and pistachios. 
Let cool down and enjoy!

Carob pancakes tacos style. 
Why tacos => because arenโ€™t too small for pancakes stack and not enough large for crepes, so I call them #tacospancakes.

To make them I mixed 2 eggs, 1 tbsp carob powder (if you don't have can successfully replace it with cacao powder) 1 tbsp spelt flour, 2 tbsp oats, vanilla, cinnamon, bit of plant milk. Blend everything together and enjoy with favourite topping. I used banana, blueberries, almond & hemp seed butter.

Yes, I enjoyed my time off with my family and friends and all my focus was to enjoy these moments.

If you in Bulgaria, don't switch on the oven, please I know it's around 36ยฐC ๐ŸŒก there but if you in a cold place you have to try this mini ๐Ÿฅง Banana walnut cake with chocolate frosting ๐ŸŒ

All you need is:
1 very ripe banana
1egg
2 tbsp spelt flour + 1tbsp oat flour
Some walnuts, cinnamon, baking powder and vanilla. 
Mash the banana, beat the egg,mix the dry ingredients and mix all together. 
Bake at 180ยฐC until golden brown or around 20 minutes. 
For the frosting I used: almond butter, cacao powder and maple syrup. 
Enjoy with coffee or tea! โ˜•๐Ÿง

Start of the new week will be with no-bake carrot cake! ๐Ÿฅ•๐Ÿฐ

Moist, super easy and quick to make. 
Frosting is simple thick Greek yogurt ( use coconut yogurt for vegan) with chopped pistachios, bit of maple  syrup and carrot swirls. 

Tha base is made with grated carrot, mix of pistachios and almonds, dates, coconut oil, shredded coconut and cinnamon.

I made my smoothie bowl with banana, dragon fruit, a bit of thick coconut milk, oat milk, collagen powder and maca powder. Topped with my favourite crunchies and superfoods.

Finally tried pink pattaya and I think It has incredible fresh taste, as described like something similar to watermelon and kiwi ๐Ÿ‰๐Ÿฅ I made my smoothie bowl with banana, dragon fruit, a bit of thick coconut milk, oat milk, collagen powder and maca powder.
