The reason is that it is made using the fresh red carrots that we get in winters as they are tender and juicy. However it can also be made using orange or purple carrot. This traditional simple and delicious carrot halwa recipe is made with only whole or full-fat milk, ghee and sugar. The cardamom powder and ghee gives it a unique aroma and rich texture. You don’t need khoya (evaporated milk solids) or condensed milk. So don't worry if you don't have them in your refrigerator. However you may add it if you want to reduce the cooking time. The best thing about this sweet is that it can be made and refrigerated in an airtight container, and it keeps for almost 10-12 days. In my family, it’s made in large quantities and enjoyed everyday after meals. You can also make this during festivals or a dessert for your winter parties and I assure you that it will not fail to impress anyone. How to Make Gajar Ka Halwa? For the recipe, the grated carrots are sauteed in ghee then cooked in milk and then mixed with sugar, nuts and cardamom powder. I have made this recipe on stovetop and in open pan. It will require a bit of time and patience as you’ll need to stir the carrots in ghee to fry them a bit, then cooked in milk which adds great flavors. Usually whole milk is used to cook the carrots but if you want to save some time then use evaporated milk instead which is easily available in grocery stores. You can also add some khoya if its available. You can adjust the sweetness as per your preference and personal taste. If the carrot is sweet and juicy then less sugar is required. In the sugar free variant, sugar is excluded from the recipe. You can also make this recipe in an Instant Pot and while it is much faster and also instead of hand grating you may use food processor to crush the carrot. It’s more common in South India but now I see it just as much everywhere in India. Tips for making perfect Upma Roasting Rava: Dry roast rava in low-medium flame and keep stirring frequently. Keep a close eye on the skillet and roast the sooji. Do not brown it. Ratio: For making upma the ratio of upma/sooji and water is key. After experimenting several time I came to conclusion that the ratio of 1: 2.5 is ideal to make it perfectly soft consistency like you get in restaurants. Veggies: To make upma more healthy and nutritious add varieties of vegetables of your choice. Just make sure to maintain the ratio of sooji and veggies. Add rava in parts: Add 2-3 tablespoons of roasted rava at a time into the veggies, stirring after each addition. This way the upma will not form any lumps. Do not add all the sooji to the water at once. Add Extra ghee and lemon juice: I love preparing upma in ghee, but you can also make them in oil. At the end add a teaspoon ghee and squeeze lemon to enhance the flavors. Whenever I make Sarson ka saag, I always make makki ki roti along with. It’s like I can’t have the saag with my normal roti or paratha. I need that thick flavorful Makki ki roti. It uses makki ka atta (maize flour/corn flour) which is a gluten-free flour and as with any gluten-free flour, the trick lies in making proper dough, rolling and cooking it properly. Makki ki roti can be little tricky to make and need some time to be expert in making it without breaking the edges. Mustard leaves are slightly bitter in taste and corn is naturally sweet. The sweet corn flatbread perfectly balances the spicy and bitter saag. But don’t limit makki ki roti to just saag! It is such a delicious bread that it will go great with any curry or chutney.
